I love a good muffin. I also love making all the good things healthy. These muffins were deliciously fluffy and quite easy to throw together in just a few minutes. They are made with coconut flour and sweetened with honey, and are just sweet enough. I was actually thinking these muffins would be a great substitute for yellow cake cupcakes. They are dairy free and gluten free, but full of flavor!
Coconut Flour Chocolate Chip Muffins
1/2 Cup Coconut Flour
1/2 tsp salt
1/2 tsp baking powder
6 eggs
1/3 cup melted butter or coconut oil
1/3 cup honey or maple syrup
1 tsp vanilla extract
1/4 cup chocolate chips
Preheat oven to 400 degrees. Mix together coconut flour, salt, and baking powder in a small bowl. In a larger bowl whisk eggs, honey, butter and vanilla. Add the dry ingredients to the wet ingredients and whisk together until thoroughly mixed. Ladle into prepared (greased) muffin tins and top with chocolate chips. Bake for 15-20 minutes or until toothpick comes out clean when inserted into the middle of the muffin. Cool on rack and enjoy!
